Baking:: Easy and Quick Corn Bread

Corn Bread
Savoury breads are always a feature in my kitchen. I have already shared the recipe of one of my savouries - the Cheesy Sun-dried Tomatoes Bread a while back so I thought it was about time to share another particular favourite. Corn Bread!!!

I don't know why but for some reason I always just seem to associate Corn Bread with "wholesome comfort" on so many levels, and this is a recipe that is so easy; you could make it on "auto-pilot" mode.
Its a wonderful accompaniment for those soothing winter soups.

Ingredients
  • 195g Yellow or White Cornmeal
  • 60ml melted Butter
  • 240ml Milk (whole or semi-skimmed)
  • 135g Plain Flour
  •  90g Brown Sugar
  • 1 Egg
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt

Oven Ready
Method
  1. Pre-heat oven to 200 degrees C
  2. Into a mixing bowl, add melted butter, milk and egg then whisk thoroughly
  3. Add cornmeal, flour, sugar, baking powder and salt; and gently fold ( Do not be concerned if it is still a bit lumpy)
  4. Pour mixture into greased bread tin
  5. Bake for 40 minutes until golden brown (Insert a knife into the bread to ensure it is cooked through)

  7. Remove from oven and allow to rest for about 10 minutes before serving
