Baking:: Rustic Chocolate Dipped Coconut Cookies

Choco-Coconut Cookies
In the current season of all things Christmassy, I decided to add an extra twist to one of my previous and recent recipe.
There are some ingredients that I personally believe have the ability to just bring foods up to date and in line with the seasons.
Today's such ingredient is the plain ol' Chocolate! I am a chocoholic any day, anytime, any season..... but it just seems extra special during the Christmas season.

Melted Chocolate
As previously mentioned, this is just me putting in an extra twist to a recent recipe post, so the Ingredients and Method remains the same until the chocolate-dipping is introduced. I went for the half-coated effect, but you can always choose to walk on the wild side and coat the cookies all over with the understanding that that will make them "mega addictive" ☺. Good Luck!

Ingredients

Coconut Cookies:
  • 150g Plain Flour
  • 1/2 tsp Bicarbonate of Soda
  • 1/4 tsp Salt
  • 110g Brown Sugar
  • 100g Castor Sugar
  • 1 Egg
  • 1tsp Vanilla Extract
  • 100g Desiccated Coconut
Chocolate Dip:
  • 110g Milk Chocolate (coarsely chopped)
  • 80g Butter
  • 2 tsp Vanilla Extract
Method
  1. Preheat oven to 180 degrees C
  2. Mix flour, bicarbonate of soda and salt and set aside
  3. In another mixing bowl, mix the butter, brown sugar and castor sugar until smooth. Alternatively, combine using a food processor
  4. Add egg and vanilla extract, and continue mixing until light and fluffy
  5. Gradually blend in the flour mixture, and then add desiccated coconut last
  6. Line a baking tray with an un-greased baking sheet and drop dough onto tray using a teaspoon. Ensure to leave enough space between the cookies
  7. Bake for 8 minutes or until slightly toasted
  8. Remove from oven and leave to cool for about an hour
  9. Heat some water in a saucepan until boiling
  10. Place chocolate pieces and butter in a heat proof bowl, and place over the saucepan. Make sure the base of the bowl does not touch the boiling water
  11. Leave the chocolate and butter to melt together while stirring occasionally
  12. Add vanilla extract to the mixture and stir thoroughly
  13. Turn off heat, but leave the mixing bowl over the heated saucepan to prevent the chocolate mixture from solidifying
  14. Dip half of each cookie into the mixture and leave to dry on cooling racks for at least 2 hours before serving.
