Chewy Coconut Cookies

Coconut Cookies

I never really planned on making these, but it just so happened that I had time to kill in between waiting for the dough for my Petits Pains au Lait to prove; plus the ingredients I needed were all around me.

Besides this is always perfect for the elevenses or those chilly evenings with a nice cuppa. On a cautionary note, these cookies are very addictive ☺.

  • 150g Plain Flour
  • 1/2 tsp Bicarbonate of Soda

Method
  1. Preheat oven to 180 degrees C
  2. Mix flour, bicarbonate of soda and salt and set aside
  3. In another mixing bowl, mix the butter, brown sugar and castor sugar until smooth. Alternatively, combine using a food processor
  4. Add egg and vanilla extract, and continue mixing until light and fluffy
  5. Gradually blend in the flour mixture, and add desiccated coconut last
  6. Line a baking tray with an ungreased baking sheet and drop dough onto tray using a teaspoon. Ensure to leave enough space between the cookies
  7. Bake for 8 minutes or until slightly toasted
  8. Remove from oven and leave to cool
